Ingredients:

1/2 kilograms (1 pound) of okra 

1 large-sized egg 

1 1/2 cups of yellow cornmeal 

1/2 cup of buttermilk (fat-free) 

3/4 teaspoon of sea salt 

1/2 teaspoon of ground black pepper 

1/4 teaspoon of ground red pepper

Directions:

-Get your oven preheated to 230°C — that’s equivalent to 450°F. 

-Wash okra under running water thoroughly and shake off water. Chop off the tops and ends. 

-Chop okra into small slices, each one measuring about 3/4 of an inch. 

-Grab a shallow dish and combine yellow cornmeal, sea salt, ground black pepper and red pepper, and then mix. 

-In a mixing bowl, lightly beat egg. Stir in fat-free buttermilk. Mix the ingredients using a whisk. 

-Whisk in okra slices and allow them to stay there for a couple of minutes. 

-Transfer okra slices into the cornmeal mixture. Stir to make sure that they’re coated. 

-Lightly coat a baking sheet with cooking oil and neatly arrange okra slices on it. 

-Bake for 35 to 40 minutes. Halfway, flip over the okra slices for even cooking. 

-Transfer the baking sheet on a wire rack to let those crunchy baked okra cool for a while. 

-Transfer to a plate and then serve.
